Clean, Separate, Cook, Chill: The Golden Rules of Food Safety

When it comes to great cooking, flavor is king, but safety is the crown it wears.

Whether I’m catering a major event, blending our signature seasonings, or training food service workers, four fundamental principles guide everything we do: Clean, Separate, Cook, and Chill.

1. Clean: Wash Hands and Surfaces Often

Bacteria can spread throughout the kitchen and get onto hands, cutting boards, utensils, and countertops.

Pro Tip: Wash your hands with warm, soapy water for at least 20 seconds before and after handling food. Always sanitize your prep surfaces before switching tasks.

2. Separate: Don’t Cross-Contaminate

Even the most delicious meal can turn dangerous if raw meats mix with fresh ingredients.

Pro Tip: Keep raw meat, poultry, seafood, and eggs separate from ready-to-eat foods. Use dedicated cutting boards: one for produce and bread, and another for raw protein.

3. Cook: Cook to the Right Temperature

Food is only safely cooked when it reaches a high enough internal temperature to kill harmful germs. You can’t tell if food is cooked safely just by looking at it!

Pro Tip: Always rely on a reliable food thermometer. For instance, poultry should reach an internal temperature of 165°F (74°C), while ground meats require 160°F (71°C).

4. Chill: Refrigerate Promptly

Bacteria multiply fastest in the “Danger Zone” between 40°F and 140°F (4°C and 60°C).

Pro Tip: Refrigerate perishable foods within two hours (or within one hour if the temperature outside is above 90°F). Never thaw food on the kitchen counter. Always thaw in the refrigerator, under cold running water, or in the microwave.
